DECEMBER 2016 SELECTION : Rocket's Robiola

The Basics:

Snowy white things are popular this time of year but we're cheese people, we think differently don't we? Our perfect holiday gem might smell a little funky, ooze a bit at the corners, and wear a jacket that looks like someone sprinkled it with ash rather than snow.

Rocket's Robiola is a cheese lover's dream date for the holidays. Made with cow's milk (I believe I misled you all and said it was mixed with goat, it's not!) on a small farm in Cedar Grove, North Carolina, Rocket's Robiola is a love letter to the beautiful cheeses of Northern Italy.

Robiola is a term used to describe the smattering of cheeses made throughout the Piedmont region, usually not larger than 12 ounces and tending to be on the younger side, soft in texture, with a variety of rinds. These cheeses can be made with one, two, or three milks and their composition can vary depending on the season and availability. Although these cheeses appear fancy, they are rooted in pragmatism, I appreciate this about them.

The family behind Box Carr Handmade Cheese is turning out a few varieties on the Robiola theme, a nod to their Italian heritage and a wonderful contribution to the world of American cheese. Rocket's is my favorite of the bunch.

This cheese will be a wonderful centerpiece for your holiday gathering-- whether it's a group of one or more, in front of an open refrigerator or warming hearth, flanked by other fine cheeses or the last beads of honey in the squeezie bear-- Rocket's Robiola will fit right in.
