The Basics:

The French Pyrenees have a majestic beauty. I'm not sure why this surprised me but it sort of did. Maybe it's because everyone talks so much about Paris, Burgundy, and Bordeaux? The attention paid to those other places is warranted but the Pyrenees always inspire a physical and emotional gasp of wonder in me. This month's cheese is from one of the most successful cheesemaking cooperatives in the French Pyrenees: Onétik. 

Tomme Brebis Chevre is exactly what it sounds like (if you listen with a French-speaking ear).

Tomme (wheel of cheese, weighing around 10 lbs, sporting a natural rind) + brebis (sheep) + chevre (goat) = a lovely round of cheese made from a blend of sheep and goat milks.

I've referred to this cheese below as a crowd-pleaser and brow-raiser because I do think this cheese is generally pleasing to most palettes (cheesemakers in the pyrenees have a knack for this) and also will raise brows of those who don't think they like goat's milk. No promises that it will convert anyone to a full-blown chevre fan, it's more like a gentle nudge of encouragement to expand someone's cheese horizons.

One Pound, Party of One ($33): This level of membership gets you a pound of the crowd-pleasing, brow-raising Tomme Brebis Chevre. This level of membership includes an invitation for one to join us at the pick up party on Thursday, January 19th at 6:30, where you can learn about the cheese, taste, and experience pairings. If you want to bring someone to the pick up party please see "One pound, Party of two".

One Pound, Party of Two ($38): This level of membership gets you a pound of the crowd-pleasing, brow-raising Tomme Brebis Chevre. This level of membership also includes an invitation for you and one guest to join us at the pick up party  on Thursday, January 19th at 6:30, where you can learn about the cheese, taste, and experience pairings.
